Vietnamese Phin Brew Guide

The Phin consists of 4 parts: The lid, the strainer, the filter cup/chamber, the base/dish

Step 1

Grind your favorite dark roast on a fine setting that will yield a consistency similar to sand. You will need 2 tablespoons of ground coffee for every 4 ounces of water. 

Step 2

Bring water to a boil. The temperature should be 204°F.

Step 3

Pour in 2 tablespoons of ground coffee (15 grams) on the filter cup and gently shake the filter to evenly distribute the grounds. 

Step 4

Place the strainer on the cup. 
Step 5

Place your phin filter over your cup. Set everything on top of a scale, and zero it out (not required) 

Step 6

Begin pouring 4 ounces and pause for 30 seconds to allow the coffee grounds to bloom. 

Step 7

Pour the rest of the water. Wait 4 minutes for the grounds to completely brew. 

Step 8

Add condensed milk or sugar to the bottom of your cup before pouring. Be sure to stir well to incorporate the condensed milk.
